These are really really handsome cupcakes.  They look fancy, I know, and deep on the inside, they are even fancier.

That is, these are the long-promised Heart Attack Cupcakes, which are incredibly chocolatey in 2.5 ways, and have a cream cheese frosting filling.  And by “have a cream cheese frosting filling,” I mean they have a fancy fancy toasted organic black walnut vegan cream cheese filling, because I am just that gosh-darn awesome.

The “frosting” is actually the thick concoction of chocolate, soy milk, a wee bit of margarine, and patience that is sometimes called “ganache.” (more…)

Sugar coma yeah yeah

Happy mediums?  They are not my thing.  That explains not only this blog, I suspect, but also my propensity to think that 15+ miles in a hilly city is a reasonable distance to travel by bicycle.  That explains why I passed out on a book at 8:45 last night, because making 3 batches of cupcakes is not, in fact, that exhausting.

TASTYPANTS (pretend the ganache doesn't look like the rubber poo that annoying guy in fourth grade always had)

As it is winter in this rain-soaked land, all of my creative energies have to remain indoors.  Double-digging trenches is an exercise in futility when I’m facing another two months with average rainfall totaling eleven inches. As it is, I spend my time creating shockingly intricate planting calendars, trying to teach myself to use obscure fundraising software, and wondering about what kind of decadent the next cupcakes should be.

Which is where My Nefarious Accomplice Alexis comes in.  MNAA introduced me to the concept of salted chocolate.  I like the idea of dark chocolate with a nipping sea salt providing a sharp counterpoint.

It seemed like a really exciting idea for a cupcake, and I am indeed excited.  One of my other blogging projects has culminated in temporary limited cupcake funds, which have gone towards the purchase of a bag of coal-black chocolate, smoked sea salt, and dutch-processed cocoa powder, which went into these wonders.

I really wanted these chocolate hazelnut cupcakes, and the easiest way to get such cupcakes was modify these cupcakes.  It was super super easy and I fully recommend it.

Basically, I omitted a couple tablespoons of flour, bringing it down to just 1 cup of flour, and added a quarter cup of cocoa powder. (more…)

Crunch Peanut Butter cupcakes with a Dark Chocolate Ganache

Fun fact: I made three dozen wicked awesome cupcakes yesterday with my associate, M. Ducksworth, and thus this will be a three-part post, including a re-do of the lemon blueberry cupcakes that turned out AWESOMELY, and really attractive.  That sentence had a lot of clauses.  Hooray for cycling endorphins!

(Most of) These cupcakes made their eventual way into the bellies of some delightful activists who go out and canvass throughout the city, educating about issues ranging from health care for kids living in poverty to marriage equality.  So yay for them, they’re neat.
