This will be my second alcohol-free cupcake post in a row! That’s some sort of record, I am sure. These cupcakes were for the same baby shower as the previous Almond and Vanilla ones. Frankly, there’s not too much creativity going on here, as I jacked Gibb’s Brown Sugar Cupcake recipe once again, and I’m stealing my own Peanut Butter Mousse. Add some jelly in the middle, and you have a peanut butter and jelly cupcake :)
Brown Sugar Cupcakes
1/2 c. butter
1 1/4 c. flour (preferably cake flour)
1 1/2 tsp. baking powder
1/4 tsp. salt
1/2 c. packed brown sugar
3/4 c. granulated sugar
3/4 c. milk
1 tsp. vanilla extract
Preheat your oven to 350 degrees and prep your cupcake pans with liners or cooking spray.
Beat together the butter and sugars (brown and regular granulated) until light and fluffy. Add the vanilla and combine.
Add the eggs one at a time, beating after each addition.
Sift together the dry ingredients (flour, baking powder, and salt) into a separate bowl.
Alternately add the dry ingredients and the milk in small additions.
Fill the cupcake tins 2/3 full and bake at 12-15 minutes for mini cupcakes and 18-22 minutes for regular cupcakes.
Allow to cool to room temperature on wire racks.
Peanut Butter Mousse
4 oz. cream cheese
1 c. powdered sugar
1/4 c. milk
3/4 c. peanut butter (creamy, please!)
2 c. heavy cream
1 tbsp. vanilla
Cream the cream cheese with powdered sugar. Add milk and peanut butter. Beat until combined.
In a separate bowl, whip the heavy cream and vanilla together until it forms stiff peaks.
Fold the whipped cream into the peanut butter frosting until just mixed.
To assemble the cupcakes, you have two choices. You can use a pastry tip to inject the jelly into the center of each cupcake (you can find an “injector” tip at any bake ware store or craft store like Michaels. I used a #10 tip and it worked fine! Choose a larger tip for bigger cupcakes.) Or, and this is best with regular sized cupcakes, you can cut a small cone out of the top of each cupcake and fill the void with jelly. The mother-to-be for whom these were made requested strawberry jelly. But you can chose whatever flavor you like!
Whichever jelly method and flavor you choose, pipe the peanut butter mouse over the entire top of the cupcake. This will cover whatever hole was left by the jelly insertion!
