For my birthday, my sister and I decided to make cupcakes. After flipping
through many pages of delicious recipes and mouthwatering photos within “Vegan Cupcakes Take Over the World,” we decided to go for the extravagant Tiramisu Cupcakes. For these lovely cupcakes, we needed Kahlua; my sister and I were more excited about this than my mother was, but let me just say that after the cupcakes were completed, my mother (who doesn’t drink coffee at all and hardly ever drinks alcohol) had just as much trouble resisting the delicious things as the rest of the family.
So, we started with the creation of your basic cupcake. Once that had cooled, we carved out about an inch out of the center of each cupcake, and filled it with a Kahlua/Coffee concoction that was eagerly soaked up by the cupcake and added lots of intense flavor. We then globbed frosting over the holes with a cream-cheese frosting, dipped the cones of cupcake in the Kahlua/Coffee deliciousness and placed them on top of the frosting. We frosted again, sprinkled on some cocoa and cinnamon, and placed a chocolate chip on top for good measure. YUM!
