Believe it or not, the s’mores cupcake was the first cupcake I ever “developed” over 3 years ago. I’ve made it dozens of times, and it’s a friend and family favorite. How it has never gotten its own post, I don’t know! The unfortunate part is that none of its components are new to Cupcake Villains. I used to use a boxed cake mix for the chocolate cupcake, but I’ve since then upgraded to my Decadent Chocolate recipe. I use a marshmallow frosting recipe that has been featured in such favorites as the Rocky Road cupcakes. Chocolate Chip Cookies are an American treat! Why not turn them into a cupcake? Originally, I wanted to figure out how to set a cookie dough bomb in the middle of the cupcake, but my depleted mental capabilities (it’s almost spring break…I am so close to getting some good rest) would not allow this. Instead, I pilfered Gibbs’s Brown Sugar Cupcake recipe. A chocolate chip cookie’s uniqueness comes from the amount of brown sugar in the batter, so I felt this cupcake base was very appropriate. I used her recipe exactly, but left out the cinnamon! Thanks, Gibbsy :)
Next, what to do about the frosting? To me, the appeal of cookie dough is the deliciousness that comes from just eating it straight from the bowl as batch after batch goes into the over to be baked. So, I decided to simply use COOKIE DOUGH as the frosting!
In Vegan Cupcakes Take over the World, one of the many intriguing variations on the basic chocolate cupcake is for cookies and cream/Newman-O’s cupcakes, and I’ve wanted to make them FOR AGES. Luckily, M. Ducksworth is amenable to the suggestion, so off we go!
